Chocolate Chip Cookies

2 cups of unsalted butter, melted
2 cups brown sugar
2 cups granulated sugar
4 eggs
2 teaspoons vanilla
4 cups all purpose flour
5 cups of oatmeal (not quick oats)
1 teaspoon salt
2 teaspoons baking soda
2 teaspoons baking powder
24 oz. chocolate chips
12 oz. chocolate chunks
3 cups chopped nuts (optional)

Preheat the oven to 375 degrees. In a standing mixer, cream together melted butter, sugar and brown sugar. Once combined add the eggs and vanilla. Measure 5 cups of oatmeal and then blend them in a food processor or blender until it is a powder. In a separate bowl mix together flour, oatmeal powder, salt, baking powder and baking soda. Slowly add the dry mixture to the wet mixture. Add all the chocolate chips, chocolate chunks and nuts. Do not allow to mix for too long or the chocolate will start to melt. Remove the mixer bowl and make sure that the chocolate and nuts are well distributed, if needed mix a little more by hand. Make golf ball sized cookies and place on a ungreased cookie sheet for 9-11 minutes. This is a very large recipe. It yields 60+ cookies. If you plan on making this just for yourself or home, cut the recipe in half.
