Lemon Herb Chicken Ring

This recipe is an adaptation of a Pampered Chef recipe

1 can white chicken
1 cup mozzarella, shredded
1/2 cup diced red bell pepper
1 tablespoon lemon juice
2 cloves garlic
5 tsp mayonnaise
1 teaspoon italian seasoning
1/2 cup parmesan cheese, shredded


Preheat oven to 375 degrees. Chop chicken and dice the red bell pepper. Combine chicken and pepper with minced garlic, mozzarella cheese, mayo, italian seasoning and parmesan cheese (reserve 2 tablespoons parmesan for later). Unroll crescent rolls, arrange triangles, slightly overlapping, in a circle to look like a sun on a pizza pan or stone. Gently press all of the crescent rolls together so that they are stuck together. Spoon meat mixture evenly over dough in continuous circle. Bring points of triangles over meat mixture and to the center of the ring; pinch to hold in place. Stretch and press all of the overlapping crescent roll to contain all of the meat mixture. When complete it should look like a wreath. Sprinkle remaining parmesan over top. Bake 28-30 minutes until golden brown.
